Soba lovers, what do you think makes it “connoisseurs” to eat soba?
Some people say that “the connoisseurs eat soba with salt,” but Kanda Nishikicho Sarashina, a long-established soba restaurant that has been serving soba ever since it opened in Kanda, Tokyo at the beginning of the Meiji era, tweeted that “salt doesn’t appear in Edo soba.” According to Sarashina of Kanda Nishikicho, in the Edo period soba was eaten with “grated radish soup,” “miso-flavored boiled soup,” or “hishio (seaweed).” So you never ate it with salt.
